Taylor Swift and Kansas City Chiefs Inspired Super Bowl Snacks

Thinking of hosting a Taylor Swift – Kansas City Chiefs Super Bowl party?  I’ve got you covered!

My family loves Sunday football so much that every week we bring up an extra TV from the basement, watch all 8 screens purchased in our Sunday Ticket, and eat snacks instead of lunch.  And you know I theme those snacks after a different franchise each week. 😉

Back in October I crowd-sourced some ideas and joined the TS-KCC madness with Chiefs-Taylor-themed snacks.  Here’s what we came up with:

 

Kansas City Tight End BBQ:

1. If you can, procure a tight end, preferable one holding the record for most post-season receptions and eyes that sparkle.  If you can’t find one, a pork shoulder will work.

2. In a prep bowl, combine 1T brown sugar, 1 t garlic powder, 1 t onion powder, 1 ½ t paprika, 1 t chili powder. Rub into your meat.

3. Dice half an onion and nestle into the bottom of your crockpot. Top with ½ c water, a can of root beer, and about 1/3 of a bottle of Kansas City BBQ sauce.  We used a 12 oz bottle of Heinz.

4. Stir to combine before gently adding your tight end.

5. Cook on high for 5-6 hours or until the meat can be easily shredded with a fork. 

(Or if this grosses you out like it does me, cut the meat into 3 smaller chunks and allow your stand mixer to shred the meat.  Use the paddle attachment on the lowest setting)

6. Return meat to crockpot and add the rest of the bottle of sauce.  Serve on buns.

Cinnamon Rolls

The Kansas City people in my feed said that Kansas City BBQ is often served with cinnamon rolls?  I used a football helmet mold to shape canned cinnamon rolls.  You could also just flatten them into the shape of a football and add the icing in the design of the laces.

 

Chicken Tenders with Ketchup and Seemingly Ranch

I served these snacks a week or so after the internet lost its mind over Tay’s tenders and “seemingly ranch.” (Glad to see she’s a Midwesterner at heart!).  Still relevant?  If so, head to the freezer section of your favorite store, grab some frozen tenders and cook according to package directions, easy-peasy.  Serve with, you’ve got it, your favorite ketchup and ranch dressing.

 

Paper (Onion) Rings

Another easy idea from my sister: purchase some onion rings from the freezer section and prepare according to package directions.  Obviously, serve with ketchup and ranch.

 

Wildest Dreams Veggie Tray

I cut up a fruit and veggie tray every week.  Do they eat it? 

Only in my Wildest Dreams.

Ever S’mores

                Rice Krispie Treats, but make them S’mores!

1.  Melt 5 T of butter in a large saucepan (I like to use my soup pot)

2.  While that melts, generously spray a 9x13 pan with cooking spray. Sprinkle ½ c mini marshmallows and ½ c of chocolate chips into bottom of 9x13.

3.  When butter is melted, remove from heat, add 8 c of mini marshmallows and stir like your life depends on it. 

4.  Once all of the marshmallows are melted, add 8 c graham cereal like Golden Grahams.  Stir until coated. 

5. Just when you’re just about sick of it, add 1 c of chocolate chips.  Stir until barely combined.

6.  Dump into the waiting 9x13 – right on top of those chocolate chips and marshmallows.  Add one more ½ c of chocolate chips and ½ c mini marshmallows to the top of the mess before using buttered hands or wax paper to press it flat.

7. Spend the next day soaking and chipping that pot clean. Don’t say I didn’t, say I didn’t warrrrn ya!

Lavendar Haze Mocktail

1. Create a lavender simple syrup by combining 1 c water and 1 c sugar in a small saucepan.  Stir to combine while bringing your concoction to a boil. Once boiling and the sugar is dissolved, remove from heat and add a small bundle of lavender.  Allow to cool to room temperature.

2. Once cooled, decide if your lavender is purple enough.  If not, add a little food coloring until desired lavender is achieved.

3. Pour about 1/8 c of lavender syrup into a glass, top with ice, top with sparkling lemonade.  Since yellow + purple = brown, try to find a lightly colored sparking lemonade.  I used Aldi’s Sparkling Ice and it worked great.

 

Cooks Note: since lavender may be harder to find in the dead of winter, I think I’ll swap my lavender syrup with blueberry.  Instead of steeping lavender in the simple syrup, I’ll add a cup of frozen blueberries and then strain them out.  You could also simply purchase your lavender syrup at the store or online.
